Gochujang duck confit
For when you’re feeling fancy and want to impress!
Serves 4
Cook Time 6 hours
INGREDIENTS
8 duck legs
1c duck fat
2 sprigs rosemary
2 sprigs thyme
2 cloves garlic
1 package Scooty’s Sweet Gochujang
As needed Neutral Oil (canola, flaxseed, safflower etc)
INSTRUCTIONS
Preheat oven to 225 degrees F
Toss duck legs in a bowl with Scootys Sweet Gochujang until covered thoroughly
Place duck legs in a high walled cast iron or a dutch oven with rosemary, thyme, and garlic cloves
Microwave duck fat for 20 seconds or so enough to melt and pour into pan, then add your neutral oil until the fat and oil come up halfway the duck legs. It is very very important that the oil does not go higher than halfway up the pan, filling the pan higher can cause oil to splatter on the oven and potentially combust.
Bake for 6 hours
Remove from oil and serve! (be sure to keep the fat as its great to cook with later)
